The Paddlefish caviar was nicely sized, greyish in color, melting in your mouth and buttery in taste, but a little on the salty side; the Hackleback caviar a bit smallish, but tasting very nice and not overly salty, and the very favorite of my wife, while the Bowfin caviar was a bit "fluid", a bit salty maybe, but also surprisingly nice, given its price point. I'll confess upfront that I'm not a caviar aficionado, I've always wondered why people would spend that much money on something that smells fishy and is oversalted, and where the majority of product comes from producers with very questionable environmental records.
